Chef Nilka Hendricks is owner of Chefin’itUp Catering with Chef Nilka.  The road to this point has not been an easy one.  Having faced setbacks and obstacles in her life that would deter the average person, she has proven herself to be a go-getter of unparalleled proportions. Chef Nilka is a witty, outgoing, resilient, yet, no nonsense person with a fierce determination to succeed and reach her goals.

Born in Monterey California, Chef Nilka grew up in Glen Cove, NY to a single mother who immigrated to America from Panama and raised her, alongside her sister and two brothers. When she was 5 years old, her grandmother passed away from breast cancer, which deeply affected the young Nilka and fueled her desire to become a nurse. Although, she became a mother at a young age, she worked hard to support her family and after years of working various jobs, she decided to finally pursue her dream of becoming a nurse.

While attending school, Nilka’s mother was diagnosed with breast cancer. Nilka took time off from school to care for her mother. During this time, Nilka began contemplating a career change and her lifelong passion for cooking overtook her. She enrolled in the Culinary Academy of Long Island in Syosset, NY and one year out of her training she was hired as an intern at a catering company where she was hired as a permanent staff member. She quickly moved up in the company as the host of her own parties. 

Seeking more responsibility, Nilka accepted a position as Head chef at a new Vegan café in Brooklyn, NY.  At Earth Tonez, Nilka was able to cook and create menus in her own culinary style and included specialty vegetable wraps, fresh Portobello mushroom soup, and other exquisite foods entrees. This position served her well, as she gained experience that helped land a job as a line cook in the Hamptons. She was so dedicated to succeeding, she traveled two hours each day, to and from work. If needed beyond her normal working hours, she would stay overnight. Her drive and commitment to hard work did not go unnoticed.  Nilka was offered a job at the Empire Hotel Rooftop Bar & Lounge, a haven for upscale catered events and celebrities, in Manhattan, New York. She worked at the hotel until an opportunity arose to audition for Hell’s Kitchen.

Unafraid of taking risks, Nilka took a chance and auditioned for Hell’s Kitchen with Chef Gordon Ramsey. After completing the rigorous selection process, she was cast to be one of 16 contestants for the show vying for a chance to be Executive Chef at Chef Ramsey Savoy Restaurant in London.  She worked hard, side by side with Chef Ramsey and even received a compliment from Chef Ramsey’s own mother, lauding Nilka’s steak as “first class”. Although, eliminated in episode 10, just shy of becoming one of the Final 6, she values the experience and friendships she made. It also served to strengthen her resolve to pursue her dreams. Upon leaving Hell’s Kitchen Nilka was met by Chef Ramsey in the parking lot and told to “Walk out with your head held high, sadly, you are not ready but what you are ready for is to follow your dreams. Don’t stop”. And she didn’t. She accepted a position as Executive Chef at Retro Lounge in Freeport, NY where she created a menu of international fusion dishes that were lauded for their wonderful, savory flavors. While at Retro, her culinary mastery of steak was consistently praised, as her jerk rib eye became a standout dish and customer favorite.  

At Retro Lounge she hosted the first ever Daughter’s Day Appreciation dinner where mothers from all over were shown appreciation for their love, support for all they do.  This event was a success and gave her an idea for segment in a show she currently developing.  As daughter of a single mother and herself, a single mother of three girls, she knows the importance of spending quality time with family and working within a budget. The shows segment will have her going into the homes of single parents, showing them how to make dinner preparation a family event. She will share ideas for creating time saving, nutritious, yet tasty meals on a budget.  
Always determined and ambitious, and no longer willing defer her dream of having her own restaurant one day, she struck out on her own and is currently the Executive Chef and Owner her own catering company, Chefin’itUp Catering with Chef Nilka.  With her new venture, she caters private parties, focusing on providing clients with cuisine “full of savory flavors that you just want to keep on eating”.

Her three daughters remain her inspiration as she feels it is important to demonstrate to them that anything is possible if you work hard, focus your energy and persistently follow your dreams. Chef Nilka Hendricks has made a name for herself in the culinary world and her hard work is paying off.
